We had this for our Family Home Evening Dessert last night. It was very easy and very good. Our family enjoys key lime yogurt so that's why I decided to try it.
This is from the book, "Move to Loose" by Chris Freytag.
10 graham crackers
3 T of canola oil
3 T of light maple syrup
Break crackers into crumbs. Use a fork to mix in oil and syrup. Press into an eight-inch pie tin. Use wax paper to press the crust into the pan if it's sticking to your fingers. Chill the crust while you make the filling.
(Okay, so I just used a regular graham cracker crust pie that I already had)
Filling: 1/3 C Key lime juice
15 oz can of fat-free sweetened condensed milk
8 oz tub of light, nondairy whipped topping
dash of food coloring.
Stir together and spread into the crust. Chill for 5 to 8 hours. Top with fresh strawberries if desired.
(Okay, so I didn't have the fat-free and I used regular. It was extra good! Also next time I make it I'm going to start with 1/4 C key lime because it was almost to strong).
It really was easy and was very tasty. Something different you all should try.
I also made Debra's "Cheesy Broccoli Soup" a couple of nights ago from her new cook book. It was very good!!! It was definitely the best soup I've ever made. Of course it's all in the recipe! Thanks Deb!
